Alleged "Detox" Green Smoothie

I found this smoothie recipe from Pinterest. The original can be found here. This was pretty disgusting. I'm not sure what I did wrong, but is kale supposed to be spicy? The consistency was thick (guess I didn't blend long enough). And mine was not bright green like the original photo. Lastly, I wasn't "detoxed" either.

Banana, Pear, Kale, Spinach, Orange Juice




I hate to throw it out, but first I'm going to add some mixed frozen fruit, blend it more and see how it tastes afterwards.

Roasted Shrimp & Broccoli

I've been in a eating-the-same-things-week-after-week rut, so as soon as I found this recipe on Pinterest and noticed it only included 2 ingredients, I knew I had to try it (I prefer SIMPLE as possible). The only changes I made from the original recipe was omitting cumin and coriander seeds. I wanted to use what I already had on hand. I've purchased too many seasonings in the past for one-hit wonder recipes and now they're just sitting in the cabinet, waiting to expire I guess. Also, I topped this over BROWN rice instead of white.
I'm not into counting my food calories anymore, so I don't have a calorie count for ya. Off the subject, but if you've seen the latest Desperate Housewives episode (watch the part where Andrew brings his new "fiance" home. She's formally obese.), you will see a little of why not. Thinking about the calorie count of EVERYthing I ate was like how some people feel about the scale. It can become obsessive.

Cajun Red Beans & Rice

It just dawned on me that I did not count the calories for this meal. I haven't counted calories in about 3 weeks now. Partly due to laziness and the other part is that I've wanted to wean myself off of counting calories so much. I just can't see myself doing it everyday anymore. I've talked about how I don't want to do it forever anyway. Now, I have been monitoring my weight, and it's only fluctuated maybe 3-5lbs. I'm definitely not worried about that. Now, an additional 10lbs, yeah. I've been maintaining my running schedule and cross training workouts in the mix pretty consistently, so I have nothing to worry about. I've also had a major race and a PR (personal record) I wanted to finish with specific goals, so that kept me on track by itself. That will be a separate post. For now, here's a new recipe I had been meaning to try.

I found this recipe, which was originally a vegan recipe from someone's blog I read. This is like the umpteenth time I've found a recipe and then forgot to note whose blog I've found it from to give them proper credit. Anyhoo, it was my every intention on trying the vegan version, but (and I hate that I used this as an excuse to) my local grocery didn't have it AND the closest full-blown organic grocery store is forever away from my house. I would need to already be in the area to go there. I'll probably make a trip soon.

The recipe is somewhat clean, minus the beef sausage and Worcestershire sauce I used in place of the vegan versions.







Ingredients 
(for 4 servings--I clearly made a huge pot, which was way than more than 4 servings): 
-1 tbsp olive oil
-1 onion, chopped
-2 cloves of garlic
-1 green bell pepper
-1 1/2 cups cooked red beans
-1 1/2 cups cooked brown rice
-4 oz vegan sausage
-2 tbsp vegan Worcestershire sauce
-1 tsp sea salt
-1/2 tsp liquid smoke
-hot sauce
lots of onions, bell pepper, beef sausage, and garlic

sauteed (can I use that word, I'm no real cook? lol) using olive oil 


I had never cooked red beans before. I didn't know it was so much of a process. Also, the taste was actually kind of bland at first. My suggestion is to season it to your liking. I just added more sea salt and hot sauce to my portion. I still think this is a good go to comfort meal for the colder months that's still a healthier option. =)

Moving Forward with Eating Cleaner

I got this recipe for Thai Curry Chicken Stir-Fry from the blog Thin Thighs & Sweet Potato Fries


The main ingredients included: 
- 3 cups of brown rice
- 6 chicken breasts tenderloins
-1 cup of Trader Joe's Thai Red Curry Sauce
- Trader Joe's Asparagus Saute (4 servings in the package)



I sauteed the asparagus stir-fry in 1 tbsp of extra virgin olive oil, cooked the rice and chicken separately, and combined all with the sauce last.


The entire dish resulted in about 6 servings (1 serving = 360 calories)

Drink for breakfast or snack depending on your daily calorie budget.  You can also add flax seed.


1 cup (8oz) of orange juice
110 calories
+
1 cup of frozen strawberries
77 calories
+

1/2 cup of sliced banana
105 calories
+
1/2 cup of nonfat vanilla yogurt
50 calories
+

342 calories (makes 19 oz for 1-2 servings)
